Ingredients

Chicken Marinade

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 tbsp soy sauce
  • 2 tbsp coconut milk
  • 1 tbsp brown sugar
  • 1 tbsp curry powder
  • 2 garlic cloves, minced
  • ½ tsp ground turmeric
  • ¼ tsp black pepper

Peanut Sauce

  • ½ cup creamy peanut butter
  • 2 tbsp lime juice
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • ¼ cup warm water

Instructions

  1. Prepare the Marinade: In a bowl, combine soy sauce, coconut milk, brown sugar, curry powder, minced garlic, ground turmeric, and black pepper. Mix well to create the marinade.
  2. Marinate the Chicken: Add the chicken strips to the marinade, making sure they are fully coated. Cover and refrigerate for at least 20 minutes to allow flavors to develop.
  3. Skewer the Chicken: Thread the marinated chicken strips onto skewers, ensuring they are evenly spaced for consistent cooking.
  4. Grill the Chicken: Preheat the grill to medium-high heat. Grill the skewers for 6–8 minutes per side until the chicken is cooked through and has nice grill marks.
  5. Prepare the Peanut Sauce: In a small bowl, whisk together creamy peanut butter, lime juice, hoisin sauce, honey, and warm water until smooth and well combined.
  6. Serve: Remove chicken from skewers, arrange on a serving plate, and serve with the peanut sauce for dipping or drizzling.
