A refreshing Mixed Berry Salad featuring seedless watermelon, cherries, strawberries, and blueberries, tossed in a sweet and tangy honey lime poppyseed dressing. This vibrant and healthy salad is perfect as a light snack or a side dish for warm days.

Ingredients

Mixed Berry Salad

  • 4 cups seedless watermelon, cubed
  • 1 ½ cups cherries, pitted
  • 2 ½ cups strawberries, quartered
  • 1 cup blueberries

Honey Lime Poppyseed Dressing

  • 2-3 limes, juiced (about 3 tablespoons lime juice)
  • ¼ cup honey
  • 2 tablespoons poppy seeds

Garnishing

  • Lime wedges

Instructions

  1. Prepare the Fruit: Cube the seedless watermelon and place it in a large bowl. Wash the cherries, strawberries, and blueberries thoroughly to remove any dirt or residues.
  2. Prep the Berries: Pit the cherries, quarter the strawberries, and add them along with the blueberries to the bowl containing the watermelon.
  3. Make the Dressing: In a large measuring cup, combine the freshly squeezed lime juice, honey, and poppy seeds. If the honey is hardened, microwave it for five seconds to soften and mix easily. Whisk together until well blended.
  4. Toss the Salad: Pour the honey lime poppyseed dressing over the mixed fruit. Toss gently to ensure all the fruit pieces are evenly coated with the dressing.
  5. Garnish and Serve: Garnish the salad with fresh lime wedges before serving. Enjoy immediately for the freshest taste.

Notes

  • Use fresh, ripe berries for the best flavor and sweetness.
  • Adjust the amount of honey and lime juice in the dressing to suit your taste preferences—more honey for sweetness, more lime for tanginess.
  • For an extra refreshing taste, chill the salad in the refrigerator for 15 minutes before serving.
  • If you prefer a seedless dressing, you can strain the poppy seeds out, though they add a delightful crunch.
  • This salad is best enjoyed fresh as the fruit can release water and become watery if stored too long.
